Tammo is German by birth but has made Scotland his home. He has bought with him some stunning menu ideas and inspirational presentation featuring intricate detail, combined with flavour and seasonality. His love of fine food has mainly come from his apprenticeship under Thomas Kammeier at his Michelin starred restaurant “Hugos” in Berlin where Tammo spent his formative time as a young chef and where his passion for cooking really began.

Once in the UK Tammo’s career continued at Gleneagles, possibly one of the finest hotels in the UK and then at Skibo Castle where he continued to hone and perfect his culinary skills before joining us here at Kilcamb Lodge…

Tammo runs his kitchen with great passion and precision and although he is a hard task master with his team, demanding perfection on the plate and great attention to detail, he nevertheless has a great sense of humour and is quite a character! The Kilcamb kitchen runs as smoothly and efficiently as ever under Tammo's watchful eye and continues to delight and excite our diners. Our new guest reviews speak for themselves.

Never one to stand still; Tammo is now curing our own hams and bacon, making his own sausages and smoking most of our meats and fish.  He is also constantly sourcing and shopping for new produce in and around the locality.  The herb garden is coming along so well that we hope to be expanding it, adding soft fruits as well. Plans are also in the making for a whisky barrel to be procured and used for a new and bigger smoke house.  We are also very fortunate here at Kilcamb to have a woodland which is bountiful in its supply of mushrooms which the kitchen team pick seasonally for the menu.  Tammo and his brigade do have to constantly keep a look out for a certain deer, who seems to have a liking for the Chives and Nasturtiums!

I really appreciate all that the area has to offer in terms of fresh and local ingredients. To me freshness is everything and it is so exciting that I am able to collect the shellfish myself and to chat with the fishermen in the locality who always take care of any special requests for the Kilcamb Kitchen. With the new season just around the corner we have now started our new "Taste of Spring"  menus and gourmet tasting menu and I have plans for the summer too when I will introduce yet more exciting dishes with seasonality, freshness and flavour always in mind.

I look forward to welcoming back our regular guests and to greeting new visitors to Kilcamb Lodge Hotel in the year to come.
